Marinated Chicken, Broccoli, and Water Chestnuts

Makes 2 or 3 meals. 

This is a brand new combination for me.  The chicken breasts are marinated in a sweet asian sauce and the broccoli and there is enough in there to make at least 3 meals.  I froze half of the chicken for later.  This meal can be made with frozen Jasmine or Brown Rice.

And this turned out to be a big hit.  The chicken is marinated in a sweet asian sauce and the broccoli in a slightly spicy brown sauce.  Both were great and blended well.  

Roasted Vegetable Pizza and Butternut Squash Soup

Makes 2 meals. Vegetarian.

This is one of my earliest TJs combinations.  Cook the pizza in the oven as recommended without a baking sheet.  This pizza is a yummy combo of caramelized onions, artichoke hearts and red peppers.  It is a great pizza for lactose intolerant folks like my dad.

Enjoy the pizza with a bowl of butternut squash soup - perfect for dipping the crust.  I often add a couple dollops of plain yogurt to the soup and lots of freshly ground pepper.

Quesadillas with Roasted Corn

Makes 2 meals.
Vegetarian.
These quesadillas come in packs of three and are best cooked on the stove-top to make the tortillas crispy.  Just add some roasted corn heated up in the microwave and you've got a yummy Mexican meal.  
The only thing I was missing was some guacamole - which you can get at TJs.  And, if you were wondering, the best guac at TJs comes in the fresh two-pack sold in a square box (not the stuff that comes in a tub).  Use one pack for this meal and freeze the other.  Forgive me for adding one more, "Trust me!"

Dal Makhani with Corn Bread

Makes 2 meals (plus lots of corn bread or muffins).
Vegetarian
I made this the other day when I wanted to contribute corn bread muffins for a colleague's birthday party.  The TJs cornbread mix (requiring 1 egg, some milk and oil) fills a 9x9 pan or makes 12 muffins.  

Microwave the Dal Makhani and add over a warm muffin (or two).  For this meal I also added some broccoli (sold at TJs fresh or frozen) for some green veg.

Prosciutto and arugula pizza

Makes two meals.

Trader Joe's sells several different kinds of cheese pizzas.  For this combo, I like to get the Pizza Margherita with big pieces of buffalo mozzarella cheese.  
 
Bake the pizza as instructed on the box.  In the last minute add several pieces of prosciutto and arugula.  Buon appetito.

Spaghetti Squash with Turkey Meatballs

Makes 4 meals (depending on size of the squash)

Cut the squash in half lengthwise, remove the seeds and microwave the pieces on high for 20 minutes (or put in the oven for 40 minutes).  Then scrape out the squash strings - it looks just like spaghetti but has more flavor!

Then microwave the turkey meatballs, add the pasta sauce of your choice and put over the squash.  It tastes delicious and is healthy too.

Sesame Noodles with Asparagus and Mushrooms

Makes 2 meals or 3 to 4 side dishes.
Vegetarian.

You can buy these sesame noodles in the refrigerated section of TJs and add vegetables, tofu, chicken, etc.  This time around, I chose to add asparagus and shitaki mushrooms.  Cut the asparagus into two inch pieces and steam until it just starts to get soft.  Slice and saute the mushrooms in a tiny bit of toasted sesame oil with a sprinkle of red pepper flakes (all available at TJs!).

Then add the asparagus and noodles in with the mushrooms and cook until it is all warmed up.  Add soy sauce to taste and enjoy.
